Beef Roast in the Crockpot

28 years ago a butcher told me to use beef chuck for my roasts and stews. The chuck comes out fork tender and wonderful. Been using chuck ever since. Always very easy, cheap and delicious. Never had a reason to try other cuts.

But now i'm going to try flat cut brisket because it has roughly one third the fat. I need to start eating healthier. Watch cholesterol.

Gonna sear it first. Then 5 to 9 hours in the crockpot on low setting. So hopefully it won't turn out like shoe leather.
